Wellness Wednesday Recipe: Chicken & Vegetables Lo Mien

Ingredient’s:

Lo Mein Noodles

2 Carrots

2 Celery Stalks

1/2 Yellow Onion

1/2 Red Bell Pepper

1/4 Green Cabbage

3 Garlic Cloves

Sauce:

4 TBSP Soy Sauce

2TBSP Brown Sugar

1 TBSP Oyster Sauce

1 TBSP Water

1TBSP Corn Starch

1/2 TBSP Sesame Oil

Method: Chop Veggies to prepare for Stir Fry. Stir Fry onions and celery first.  Then add red bell pepper and cabbage.  Remove veggies from Wok.

Add all ingredients for sauce to a mixing bowl and mix with an electric whisk.  

Most Lo Mein noodles can be microwaved in water until soft or boiled for 30 seconds prior to being placed in the wok.

Once noodles are prepared, add them with a little olive oil to the wok, mix in the stir-fried veggies and add  the sauce.  

Lo Mein is one of my favorite during the week entrees that packs in a lot of veggies! You can also add protein of choice to the dish.

We actually low-broiled chicken  breast tenderloins and thin sliced them, and added them to the Lo Mein.  

Lo Mein noodles are egg based noodles so you can count on the extra protein compared to traditional pasta

Due to the high sodium content of the soy sauce you can choose to use low sodium soy sauce or add more oyster sauce over the soy sauce.  I have tried many different Lo Mein recipes and this one stands out because of the Oyster sauce.
