Ingredients:
🥫 4 cans of beans (we used black, pinto, red, and garbanzo — feel free to mix in green beans too!)
🥒 1 cucumber, peeled & sliced
🌶️ ½ red bell pepper
🧅 ½ yellow onion
🌿 ¼ cup parsley, microgreens, or cilantro
🫒 ¼ cup olive oil
🍷 ¼ cup red wine vinegar
🍁 2 tsp maple syrup
🥄 1½ tsp Dijon mustard
🧂 Salt, pepper, & 1 tsp oregano or Italian herb mix

Instructions:

  • Mix all ingredients in a large bowl
  • Refrigerate and serve cold
