Today’s Wellness Recipe Wednesday is this delicious Greek Salad with Grilled Chicken and Pita Bread

Mediterranean style salads are filling and packed with hearty antioxidant rich ingredients.  It’s a quick meal to prepare during the week.  You can also make extra salad and take it for lunch the next day.  If plans are to use for a few meal preps, do not put the dressing or feta until you are ready to eat to prevent the salad from becoming soggy.

For best flavor, marinate chicken overnight.

Ingredients

  • Thin Sliced Chicken Breasts
  • 1/4 cup Olive Oil
  • Salt, Pepper, Garlic to taste for marinade
  • Juice of 1 Lemon
  • Pita Bread

Salad:

  • 1 Head Romaine Lettuce
  • 1 Cucumber
  • 12 Cherry Tomatoes
  • 1 Cup Feta Cheese
  • Kalamata Olives
  • 1/2 Purple Onion thinly sliced
  • Ken's Steakhouse Simple Vinaigrette Greek Dressing

Grill the chicken after marinating overnight and cutting into thin slices.

Chop all salad ingredients, toss salad, add fresh ground pepper and a pinch of sea salt. Dress with Greek dressing.  Top the Salad w grilled chicken and serve with warm pita bread.  Option to serve Gyro Style!!! Buen Provecho or Kali Orexi!!!
