🧧 Wellness Wednesday: Lucky & Nourishing Potsticker Stir-Fry

In celebration of the Chinese Lunar New Year, I wanted to share a recipe inspired by tradition. Dumplings symbolize good luck, prosperity, and wealth — and what better way to honor that meaning than by preparing them in a way that also supports your health? This Potsticker Stir-Fry is a simple, colorful, nutrient-dense meal that keeps the tradition alive while incorporating plenty of fresh vegetables and balanced macronutrients. It’s festive, flavorful, and supportive of metabolic and heart health

🥢 Ingredients

1 bag frozen potstickers (chicken or vegetable)

1 tablespoon olive or avocado oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 red bell pepper, sliced

1 cup shredded carrots

2 cups chopped bok choy or napa cabbage

1 cup snap peas or broccoli florets

3 tablespoons low-sodium soy sauce or coconut aminos

1 teaspoon sesame oil

Optional: green onions, sesame seeds, or chili flakes for garnish

👩‍🍳 Method

Cook the potstickers according to package instructions until golden and cooked through. Set aside.

In a large skillet or wok, heat olive or avocado oil over medium heat.

Add garlic and ginger, sautéing until fragrant.

Stir in bell pepper, carrots, bok choy, and snap peas. Cook until vegetables are tender-crisp.

Return the potstickers to the pan and gently toss.

Add soy sauce (or coconut aminos) and sesame oil. Stir to combine and heat through.

Garnish with green onions or sesame seeds and serve warm.
