Crispy Beef and Baby Broccoli Protein Bowls

INGREDIENTS

For the Stir-Fry

1 tablespoon olive oil12 oz baby broccoli or broccolini, cut into bite-sized pieces1 medium white onion, dicedSalt and black pepper to taste16 oz extra-lean ground beef4 cups cooked jasmine rice or brown rice2 green onions, sliced for garnish

For the Sauce

1/4 cup hoisin sauce2 tablespoons coconut aminos2 tablespoons rice vinegar2 tablespoons sriracha, adjusted to taste

METHOD

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add baby broccoli and onion. Season lightly with salt and pepper.
  3. Cook for 5 to 6 minutes until vegetables are tender-crisp and lightly browned. Transfer to a bowl and set aside.
  4. In the same skillet, add the ground beef. Allow it to cook undisturbed for 2 to 3 minutes to develop a crispy, caramelized crust.
  5. Break apart the beef and cook until fully browned.
  6. In a small bowl, whisk together hoisin sauce, coconut aminos, rice vinegar, and sriracha.
  7. Pour the sauce over the beef and stir well. Cook for 2 to 3 minutes until the sauce thickens and caramelizes.
  8. Return the vegetables to the skillet and toss everything together.
  9. Serve over cooked rice and garnish with sliced green onions.
