🌿 Wellness Wednesday: Fideo Seco — A Comforting Mexican Dish That Nourishes Body & Soul

One of the things I truly love is sharing recipes that are simple, comforting, and nourishing at the same time. This week, I’m highlighting Fideo Seco, a traditional Mexican dish made with toasted noodles simmered in a flavorful tomato and chile sauce.

What makes this dish special is the way simple ingredients come together to create deep flavor and balanced nutrition. The combination of tomatoes, chiles, garlic, and herbs creates a rich sauce that coats the toasted noodles, often finished with avocado, crema, or cheese for extra texture and nourishment.

🛒 Ingredients (Serves 4–5)

  • 200–250 g fideo noodles (thin vermicelli pasta)
  • 2 tbsp olive oil
  • 3 ripe tomatoes (or 1 can whole tomatoes)
  • 1 garlic clove
  • ¼ white onion
  • 1 guajillo chile (seeded)
  • 1 ancho chile (seeded)
  • 1 chipotle chile or a little chipotle in adobo
  • ½ tsp dried oregano
  • 1½ tsp sea salt
  • 1½–2 cups broth or water

Optional toppings:

  • Avocado slices
  • Mexican crema or yogurt
  • Cotija or queso fresco
  • Fresh cilantro

👩‍🍳 Method – How I Love Making It

1. Toast the noodles
I start by heating olive oil in a skillet and lightly toasting the fideo noodles until they turn golden brown. This step adds a nutty flavor that makes the dish so satisfying.

2. Prepare the sauce
In a blender, I combine tomatoes, garlic, onion, guajillo chile, ancho chile, chipotle, oregano, salt, and broth until smooth.

3. Simmer the noodles
I pour the sauce over the toasted noodles and let everything simmer gently until the noodles absorb the sauce and become tender.

4. Finish and garnish
Once the noodles are cooked, I top the dish with creamy avocado, a drizzle of crema, and a sprinkle of cheese for balance and texture.
