Crispy Baked Black Bean Tacos for Gut Health and Steady Energy

Taco night is one of my favorite ways to show that eating well does not have to feel like a sacrifice. These crispy baked black bean tacos have been on repeat in my kitchen lately, and I served them with roasted sweet potatoes and red onion for a warm, colorful plate that kept me full all evening.

Serves 4

Ingredients
‍
1 tbsp avocado oil, plus more for brushing
1/2 yellow onion, diced
1/2 cup diced red bell pepper
1/2 cup diced zucchini
2 garlic cloves, minced
1 tsp each chili powder, cumin, and smoked paprika
1/2 tsp sea salt
1 can (15 oz) low sodium black beans, rinsed and drained
1/4 cup salsa
2 tbsp chopped cilantro
1 tbsp fresh lime juice
12 corn tortillas
1 cup shredded Monterey Jack or cheddar
To serve: guacamole, pico de gallo, shredded cabbage

‍

Method

  1. Heat the oven to 425°F and lightly oil a sheet pan.
  2. Warm the oil in a skillet over medium heat. Cook the onion, pepper, and zucchini 5 minutes until soft. Add garlic, spices, and salt for 1 minute.
  3. Stir in beans and salsa for 2 to 3 minutes, mashing some beans so the filling holds together. Off the heat, add cilantro and lime.
  4. Wrap tortillas in a damp towel and microwave 30 to 60 seconds so they fold without cracking.
  5. Brush tortillas lightly with oil, fill one half with beans and cheese, fold, and press gently. Space them apart on the pan.
  6. Bake 15 to 20 minutes, flipping halfway, until golden and crisp. Top and serve warm.

Health Benefits
‍
Black beans provide plant protein and plenty of fiber, which nourishes beneficial gut bacteria and slows digestion for steadier blood sugar after meals. Eating beans regularly has been shown to lower LDL cholesterol (1), and higher fiber diets are linked to lower rates of heart disease and type 2 diabetes (2). Avocado oil and guacamole add heart healthy fats, and low sodium beans support healthy blood pressure.
