Crowd Pleaser Mexican Soup

This is one of my favorite soups to make when the weather cools down. It comes together in one pot, feeds a crowd, and freezes beautifully for easy lunches during a busy week.

What I love about it from a wellness perspective is the balance in every bowl. Lean ground beef brings protein, black and pinto beans add fiber, and the tomatoes, green chiles, and onion bring plenty of color and flavor without needing anything heavy to make it satisfying.

My personal twist: I added hominy, a traditional Mexican corn made from dried kernels soaked in a mineral lime solution until tender and puffy. Keep in mind that hominy is a carbohydrate, so it makes the soup heartier and more filling. If you are mindful of your carbs, a smaller portion goes a long way. I also swapped the white corn for fire roasted corn, which adds a lovely smoky sweetness.

INGREDIENTS

2 tablespoons olive oil or avocado oil
1 yellow onion, diced
Salt and pepper to taste
3 cloves garlic, minced
2 pounds lean ground beef (or ground turkey or chicken)
1 teaspoon garlic salt
4 tablespoons taco seasoning
2 (15-ounce) cans petite diced tomatoes, with juices
2 (4-ounce) cans diced green chiles, with juices
2½ cups fire-roasted corn
1 (25-ounce) can hominy, drained and rinsed
1 (15-ounce) can black beans, drained and rinsed
1 (15-ounce) can pinto beans, drained and rinsed
1 quart chicken broth
1 cup mild salsa

METHOD

  1. Heat the oil in a large pot over medium-high heat. Add the onion, season lightly with salt and pepper, and cook for about 4 minutes.
  2. Add the garlic and ground beef. Cook, breaking up the meat, until cooked through, about 5 to 7 minutes. Drain the grease.
  3. Stir in the garlic salt, taco seasoning, tomatoes, green chiles, fire-roasted corn, hominy, beans, broth, and salsa.
  4. Bring to a boil, then reduce to a gentle simmer for 20 to 30 minutes, stirring occasionally.
  5. Serve with your favorite toppings.
