Savory Breakfast Fried Rice

I get asked constantly what a realistic, satisfying breakfast looks like, and my answer is rarely the one people expect. This savory fried rice with bacon, ham, and eggs has become one of my favorite recommendations, built from ingredients you likely already have in your kitchen.

Why I Recommend It

The detail that makes this dish worth sharing is simple, the rice needs to be cooked and cooled rather than eaten fresh. As rice cools, part of its starch converts into resistant starch, which your body digests more slowly. In practice, that means a gentler rise in blood sugar after eating, something I care about for patients working on energy levels, weight goals, or insulin sensitivity.

I pair that rice with bacon, ham, and eggs for a real dose of protein, which keeps you fuller longer than most typical breakfasts, and I fold in fresh carrots and red bell pepper for fiber, color, and a strong showing of vitamin A and vitamin C. Ingredients

  1. 4 slices bacon, chopped
  2. 2 slices ham, diced
  3. 4 large eggs
  4. 1 medium white onion, diced
  5. 2 garlic cloves, minced
  6. 1 carrot, diced
  7. 1/2 red bell pepper, diced
  8. 1 cup cold cooked rice
  9. 1 tbsp olive oil
  10. 3 tbsp soy sauce
  11. 1 tsp toasted sesame oil
  12. 1/4 tsp kosher salt
  13. 1/4 tsp ground pepper

Method

  • Cook the bacon and ham together in a skillet over medium heat until the bacon is crisp and the ham is lightly browned. Remove the protein from the skillet and set it aside, keeping it separate from the eggs and rice for now.
  • Wipe out the skillet, then add the olive oil and heat over medium. Whisk the eggs with the salt and pepper, pour them into the skillet, and scramble gently until just set. Remove and set aside with the bacon and ham.
  • In the same skillet, saute the onion and garlic until fragrant. Skip the frozen vegetables here and add the fresh carrot and red bell pepper instead, cooking until just tender. This is also a good place to experiment with other vegetables like broccoli or bok choy if you want to change up the dish.
  • Add the cold rice, press it into an even layer, and let it fry undisturbed for a few minutes to develop golden edges.
  • Stir in the soy sauce and sesame oil. Three tablespoons of soy sauce is enough to season the dish fully, and just one teaspoon of sesame oil is plenty. Two teaspoons ends up overpowering the other flavors, so less is more here.
  • Fold the bacon, ham, and eggs back into the skillet and serve immediately.
