This is what dinner looked like at our house last night and I just had to share it with you all. Marinated ground beef with a fresh jicama and cucumber slaw dressed in a sweet and spicy honey lime dressing. Simple, colorful, and so good that nobody asked for seconds because there was nothing left to go back to.

Jicama is one of those ingredients that does not always make it onto American dinner tables but it has been a staple in Mexican kitchens for generations. Street vendors sold it raw with lime and chili powder. Kids carried it to school as a snack alongside mango and cucumber. It is humble, crunchy, naturally hydrating, and genuinely one of the best things you can add to your plate.

What I love most about this salad is how versatile it is. Eat it on its own, pile it into a beef bowl, serve it paleo style with ground beef or turkey, or go Mediterranean with a side of basmati rice. It works every single way.

The ground beef is marinated in soy sauce, brown sugar, sesame oil, rice wine vinegar, and sambal for at least 30 minutes before it ever hits the pan. That step is what most people skip and it is exactly what makes this meal taste like you put in way more effort than you actually did.

INGREDIENTS

Marinated Ground Beef:

  • 1 lb lean ground beef
  • 3 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon sambal

Jicama and Cucumber Slaw:

  • 1 jicama, peeled and cut into thin strips
  • 2 shredded carrots
  • 1/2 bunch of cilantro
  • 1 cucumber, peeled, deseeded, and cut into thin strips
  • 4 tablespoons red onion, finely chopped
  • 1 jalapeño, without seeds and diced (omit if you prefer no heat)

Sweet and Spicy Dressing:

  • 4 tablespoons apple cider vinegar
  • Juice of 1 lime
  • 2 tablespoons honey
  • Salt to taste
  • 1 tablespoon red pepper flakes (omit if you prefer no heat)

METHOD

Marinated Ground Beef:

  • Combine soy sauce, brown sugar, sesame oil, rice wine vinegar, and sambal in a bowl
  • Add the ground beef and mix until fully coated
  • Let it rest for at least 30 minutes so the flavors fully develop
  • Cook over medium heat until done and set aside

Jicama and Cucumber Slaw:

  • While the beef marinates, prep all your vegetables
  • In a small bowl, whisk together apple cider vinegar, lime juice, honey, red pepper flakes, and salt until well combined
  • In a large bowl, combine the jicama, carrots, cilantro, cucumber, and red onion
  • Pour the dressing over the slaw and toss well until everything is coated

To Serve:

  • Plate the ground beef alongside the slaw or pile it right on top
  • Eat immediately or refrigerate until ready to serve
