Steak Machaca and Eggs

Over the weekend I grilled ribeye and filet mignon, and like most steak nights, neither one of us finished every bite. Rather than let good protein go to waste, I saved and shredded what was left and turned it into a Sunday morning machaca, a northern Mexican tradition of cooking shredded beef down with fresh vegetables and eggs.

Ingredients

  • Leftover cooked ribeye and filet mignon, shredded
  • 4 to 5 eggs, lightly beaten
  • 1 jalapeno, chopped
  • Quarter onion, chopped
  • 2 cloves garlic, minced
  • 1 tomato, chopped
  • Salt and pepper to taste
  • Corn tortillas and flax seed tortillas to serve

Method

  • Heat the shredded steak in a skillet with a small amount of olive oil until it starts to dry slightly
  • Add the jalapeno, onion, garlic, and tomato, and stir fry with the beef until fragrant and softened
  • Pour in the eggs and scramble everything together until fully cooked
  • Season with salt and pepper
  • Warm the corn tortillas and flax seed tortillas, then fill and roll into breakfast burritos
