Homemade Golden Enoki and Maitake Mushroom Pizza

A wholesome, from scratch pizza built around golden enoki and maitake mushrooms, two fiber rich mushrooms that bring both flavor and nourishment to a holiday meal made at home. Includes a cauliflower crust option for those who prefer to avoid wheat.

Ingredients

  • 1 pounds whole wheat pizza dough, store bought or homemade, or 1 premade cauliflower pizza crust for a wheat free option
  • 2 tablespoons olive oil
  • 3 garlic cloves, thinly sliced
  • 4 ounces golden enoki mushrooms, trimmed and separated
  • 4 ounces maitake mushrooms, torn into pieces
  • 4 ounces soyrizo, Italian sausage flavor
  • 1.5 cups part skim mozzarella, shredded
  • 0.5 cups part skim ricotta
  • 1 teaspoons fresh thyme leaves
  • 1 cups baby arugula
  • 0.5 teaspoons sea salt
  • 0.3 teaspoons black pepper
  • 1 lemon, zested
  • 0.3 cups parmesan, shaved for topping

Method

1 Preheat and prep crust: If using whole wheat dough, preheat your oven to 475 degrees and stretch 1 pounds whole wheat pizza dough, store bought or homemade, or 1 premade cauliflower pizza crust for a wheat free option into your desired shape on a piece of parchment or a floured surface. If using a premade cauliflower crust instead, preheat your oven according to the crust package instructions, since cauliflower crusts are typically pre baked and need a shorter finishing time.

2 Saute the sausage and mushrooms: Warm 2 tablespoons olive oil in a skillet over medium heat. Add 3 garlic cloves, thinly sliced and cook for about a minute until fragrant. Add 4 ounces soyrizo, Italian sausage flavor and cook, breaking it apart, until lightly browned. Add 4 ounces golden enoki mushrooms, trimmed and separated and 4 ounces maitake mushrooms, torn into pieces, season with 0.5 teaspoons sea salt and 0.3 teaspoons black pepper, and saute until the mushrooms are golden and slightly crisp at the edges.

3 Assemble the pizza: Spread the sausage and mushroom mixture evenly over the crust. Dot with small spoonfuls of 0.5 cups part skim ricotta, then scatter 1.5 cups part skim mozzarella, shredded over the top. Sprinkle with 1 teaspoons fresh thyme leaves.

4 Bake: Transfer the pizza to the oven and bake until the crust is golden and the cheese is bubbling. Cauliflower crusts typically need less time than whole wheat dough, so check a few minutes early.

5 Finish and serve: Remove from the oven and top with 1 cups baby arugula, 1 lemon, zested, and 0.3 cups parmesan, shaved for topping. Slice and serve warm.
